Ingredients:These are meant to be a guideline. I don't weigh or measure ingredients any more than I have to. Have fun and add/remove whatever ingredients you choose.
- 2lb Ground Turkey, browned and drained
- 6 cups diced tomatoes
- 3 cups Black Beans
- 3 cups Kidney Beans
- 3 Bell Peppers, diced (I go the stoplight route: red, yellow, and green)
- 1 Red Onion, diced
- 6oz Mild Cheddar Cheese
- 2 tbsp each of cumin & chili powder
- Garlic powder, black pepper, hot sauce, and/or salt to taste
Directions:
- Prepare tomatoes, peppers, and onions by dicing into small cubes
- Brown the turkey in a skillet (8-10min), draining excess fat if you choose
- Combine meat, beans, veggies, and spices in a large Crock Pot
- Set on ‘low’ setting for 4-6hrs, stirring occasionally
- Add remaining spices to your personal taste preference
- Serve w/ grated cheese, sour cream, chives, bacon bits, or whatever your little heart desires!
